1 large head cauliflower (about 3 1/2 pounds)
1 teaspoon salt, plus more to taste
1/2 cup good vegetable broth
4 ounces smoked gouda, shredded
2 tablespoons grated parmesan or pecorino
Freshly ground black pepper to taste
1. Core and roughly chop the cauliflower and place in a large, heavy pot.* Add salt and vegetable broth, cover and bring to a boil. Reduce heat to simmer and cook until very tender, about 10 minutes.
2. Spoon the entire contents of the pot into a food processor. Add gouda, parmesan, and a few good grinds black pepper and process until very smooth
